Here’s the homemade version recipe by @cerenthechef:
You’ll need 5–7 lavash or tortillas (30 cm), in Turkey we buy our lavash from bakeries that make pide or kebap.
For the topping: 2 medium onions, 300 g ground beef, 2 tomatoes (unpeeled), 2 red or sweet green peppers, ½ bunch parsley, 1 tbsp tomato paste, 1 tsp salt, ¼ tsp black pepper, ½ tsp red pepper flakes, 1 tsp sweet paprika, ½ small cup water, and optionally a drizzle of sunflower oil.
Blitz the onion, tomatoes, peppers and parsley in a food processor using the pulse mode and make sure to not over-blend into a purée! Mix with the ground beef, spices, tomato paste and water. The filling should be soft and almost spreadable.
Spread the filling all the way to the edges of each flatbread so the dough doesn’t burn. Bake on a baking-paper-lined oven floor at 220°C fan off, top & bottom heat for 9-12 minutes. Every oven is different, so keep an eye on it!👀✨
