Yes, I’m on the eating-better train because of the new year. Instead of making huge changes, this year I’m going to incorporate small changes like switching out ingredients to make recipes healthier. Michelin-star chef José Andrés’ one-minute omelet recipe got a makeover this morning by switching out one ingredient: olive olive for mayonnaise. The result was a delicious quick, easy, creamy microwave omelet that hit the spot!

Don’t get me wrong, I love mayonnaise. My
sandwiches get a good dollop of mayo, not that thin smear some people like. However, I know the health benefits of olive oil, and that can’t be said for mayonnaise. Olive oil is high in antioxidants, and may help lower cholesterol, fight inflammation, improve gut health and brain health, improve blood sugar levels and reduce your risk for heart disease, diabetes and some cancers. Sorry, mayo, but you lose. The olive oil makes this a nutritious part of the heart-healthy Mediterranean diet.
To make this
microwave egg recipe you only need two simple ingredients: an egg and olive oil. The mayo in the original recipe does add some salt to the egg, so you can sprinkle the finished egg with a little seasoning if you feel so inclined. Flaky sea salt, freshly ground black pepper or a seasoning blend like Italian seasoning, Tuscan seasoning or Mediterranean seasoning are good options. For some spice, you could grab that jar of crushed red pepper flakes.

This one-minute egg makes a wonderful

Ingredients
1 egg 1 tablespoon olive oil seasoning of choice (optional)
Here’s how to make it:
Crack the egg into a small bowl. Pour in the olive oil.

Whisk until light and completely combined.

Pour into a small microwave-safe bowl you’ve oiled lightly.

Microwave for 40 to 45 seconds. (I cooked mine for 40 seconds, but microwaves vary.)

Turn onto a plate. Sprinkle with seasoning of choice, if desired. Serve.
