I made a 28 egg, 15 Potato Frittata with 2 pounds of cheese for Easter.
the Lodge 17 inch cast iron pan is great on the XL Egg, also amazing for paella.

Now that’s one massive omelette. I make the 9 egg version with onions potatoes and parmigiano cheese. Arguably the best frittata followed by the zucchini and green onion with cheese.
