


First time smoking chicken wings but far from the first time I’ve smoked anything.
Did the 0 to 400 method and will certainly do again.
Half was done with a mix of meat church gospel and holy cow and the other half was gospel and honey Hog. Total weight was 2.4 pounds so I split them in half. I also added just over a teaspoon of baking powder to each bowl of mixture.
One thing we found after we demolished them was that the gospel and holy cow together were a bit saltier than we would have liked but otherwise could not be happier with the result for a first time.
I have three more packs of just over 2 pounds so going to continue to experiment and would be happy if I reproduced what I just did in a heartbeat.
We did not use any dipping sauces because we just wanted to try them spice alone they ended up being nice and crispy as well.

Not that I haven’t had good dry rub wings, but I usually smoke then sauce my wings if I’m making them. The only exception being if I’m making Chiavetta’s wings
The 0-400 method is my go to. My family prefers dry rub wings, they say they’re good as is and don’t need any sauce. Sometimes I’ll dip them in bbq, ranch, or chic fil a sauce as I eat them, but not always.
