‘Even in Bordeaux, arguably the wine capital of the world, sometimes you can’t quite finish a whole bottle. That’s when this marinade comes in handy. A loitering leftover glass of red wine can make for the perfect marinade in this roast red wine chicken recipe’.

Rachel Khoo’s Melon Charlotte with Crystallised Flowers recipe
‘I’m partial to a retro dessert and you don’t get much more retro than a ribbon-bound melon Charlotte with crystallised flowers recipe. I remember making my first Charlotte aux fraises (strawberry Charlotte) when I was studying patisserie. It was a rather fiddly, and the lengthy process began with piping our own sponge fingers before them to equal size to fit the cake tin. I’ve decided to take a shortcut and use shop-bought ones here. A ripe, perfumed cantaloup melon is a great match for summery-scented basil, one of the quintessential herbs of Provence.’

Rachel Khoo’s Pumpkin Soup with Onion Confit and Chantilly recipe
‘Onion soup is pretty much a staple on every French alpine menu. But a vivacious orange pumpkin soup with onion confit and Chantilly recipe sometimes appears, looking almost out of place between the drabber winter fare. Roasting the pumpkin might sound a bit of a palaver but it’s well worth it as it takes on a rich sweetness that simply doesn’t compare to it being boiled in a pot of stock. A little whipped cream sprinkled with some caramelised onions and crunchy seeds, and you’ll have a vibrant and colourful soup for those dark winter days.’
