Last minute booking for us during our Basque Country trip, and boy was it a good decision. The restaurant is located only a hop skip and a jump away from Asador Etxebarri in what is one of the most insanely picturesque little towns I've ever seen. It helps that it was slightly overcast that day, so all the hues of green and stone grey popped.

Service isn't perfect. Well meaning, but not a well oiled machine like you get at some high end restaurants. Regardless, the staff had an earnestness that was charming, and I'd say it's preferable to the *** hovering over you style you get at some places.

Each dish is presented by the chef, and the food is outstanding. Each dish was just pleasantly warm, with a faint waft of clean smoke flavor. While they're a spanish asador style restaurant, chef's japanese background informs what they do. No soybeans? Make tofu with chickpeas, and top it with caviar that's been lightly smoked with kelp over coals. No burdock? Grow it yourself with the restaurants first hire, a farmer flown over from Japan.

Highly recommend this place, the experience from start to finish is amazing. I cannot fathom how michelin only gives this place a single star, when it's a far better experience top to bottom than several 3 stars I've been to.
