Ground turkey usually has a bit of a not pleasant smell… and the goo is cooked blood from the meat and normal.
Eat them unless the smell smells like rotten or rancid meat… this smells like dead animal. If that’s the case… toss

Having cooked many a turkey burger, turkey meat loaf, turkey tacos, etc., the goo is quite normal. I usually scrape it off with the spatula.
If the turkey is bad it will look more brownish when raw (rather than pink) and will have a distinct metallic smell. It might be the sour you’re smelling.

That goo is called albumin, and it’s a naturally occurring protein in all muscles, even those of humans. It’s essentially a coagulated protein, similar to a cooked egg white. When cooked, the muscle tissue (meat) contracts and squishes out the albumin. This happens more quickly and more intensely the higher the heat is. So grilling, searing, broiling, etc. will all exacerbate the process. It’s completely harmless and 100% edible, but if you wish to avoid the yucky looking goo in the future, you could try cooking the turkey burgers or whatever else it may be (this happens often with salmon filets) using a low and slow cooking method, i.e. gentle heat.

Albumin, normal protein found in meat, poultry and fish. It looks unappealing but it’s not bad for you. It’s very similar to ovalbumin which is one of the main proteins in egg whites.
