Chef Daniel Rose of the Michelin-starred Le Coucou in New York is to open his first UK restaurant at the St Regis London this autumn.

 

Le Perroquet will operate as the hotel’s all-day French brasserie, showcasing comforting desserts and roasted dishes.

 

Rose will work closely with executive head chef Robert Aikens, who he has collaborated with previously while in New York.

 

A Chicago native, Rose trained in France at the Institut Bocuse before taking on the kitchens of Paul Bocuse, Jean-Pierre Bruneau and Yannick Alléno.

 

After working in Brittany and Guatemala, he opened his first restaurant, Spring, in Paris in 2006 and later launched La Bourse et La Vie, also in Paris, and Le Coucou in New York City.

 

In 2022, he was also named a Chevalier of the Order of Agricultural Merit by the French Republic.

 

Rose said of Le Perroquet’s launch: “For me, the brasserie is one of the most complete forms of a restaurant. It’s not about invention – it’s about doing things properly, with attention and care. It should feel alive, and part of the city around it. That’s what we hope to create here.”

 

The St Regis London in Mayfair will offer 193 bedrooms, including 65 suites, once it opens later this year.

 

St Regis Hotels & Resorts launched its first property in New York in 1904 and now operates more than 65 luxury hotels and resorts globally.

 

The brand became part of Marriott International in 2016 following Marriott’s £8b acquisition of Starwood Hotels & Resorts.
