My mother is a pastry chef and she does some truly amazing things, but macarons just seem to be her Achilles heel for some reason (her opinion). So, with her birthday coming up soon, I’m looking to purchase a class for her to take online. I’ve looked into https://www.instagram.com/macaron\_by\_elena?igsh=Zmp2MzdnNGhxM3Vv and although it seems like a good option, I am not sure how legit it is (scam ? yes, no?) and the dubbing is a bit silly. I am looking for English or Spanish. I like that Elena includes PDFs with detailed guides besides the videos themselves. Any one has any experience with this particular creator ? Or any other that you could recommend? Thank you! Any response would be greatly appreciated.

    I took the virtual macarons class at King Arthur. It’s real time, not asynchronous. It’s the French method which I have since abandoned for other methods, but it’s a good foundation and they are excellent instructors. They will critique your macronage during the class which is helpful since that’s probably the trickest part.

  3. It’s a very strange recipe as you only whip 1/2 of the egg whites. The other half you mix with the almond flour and icing sugar to essentially make a marzipan like paste. And then you mix in the whipped egg whites that were mixed with a hot sugar syrup beforehand (Italian meringue)

    It’s not a scam and you get the recipe. For my friend it worked out great and she gets full shells. When I tried the shells were full but pretty much everything else was a complete disaster. The shells had no feet lots of little bubbles on top and small cracks. For me, it was the worst macarons I’ve ever made it for my friend it was the best macarons she ever made.

    I am not a fan of the Italian method so I am not sure if I will try this recipe again.

    I am much more fond of Sugar Bean’s recipe.

    I think maybe an in-person class would be a better option. There’s all kind of cooking class places popping up by me now, and I always see baking courses included.
