I learned this from my sister who was a chef when she taught me how to make a proper egg-in-a-hole; you butter and grill the sides as well to keep the egg inside the bread. It took a few years to make the connection, though.
But all of a sudden one day I had a particularly uneven slice of sourdough so I pressed the grilled cheese with the spatula and the cheese squeezed out. And in an effort to not lose the gold that is cheese fried directly in the pan- it dawned on my that the egg-in-a-hole side grill could lend itself quite well to a sloppy/overstuffed grilled cheese. And it was π€πΌ chefβs kiss
Anyway- youβre not alone. lol

I slice in half , then sear the cheese sideβ¦ so it can be presented Xβd over the tomato soup without the cheese oozing out .

I’d be worried about the cheese oozing out. But I do this with other stuff. I lean it against the side of the pan.
