Preparation
- Bake the sweet potatoes for 1 to 1 1/2 hours, or until thoroughly tender. (They can be tucked into corners of the oven at any time during the roasting of the turkey.)
- Remove, cut in half lengthwise, scoop out the pulp into a bowl (reserving the shells) and mash with as much butter as you dare to use. Season to taste and add more butter.
- Spoon the mixture back into the reserved shells and arrange on a baking sheet. Reheat before serving (after the turkey has been removed from the oven).
