Savoiardi, also known as Ladyfingers, are Italian biscuits made with a sponge cake batter.
Ingredients
4 eggs,
1/2 tablespoon lemon juice,
pinch of salt,
1 tablespoon sweetener, (erythritol/stevia mix),
1/2 tablespoon vanilla extract,
3 tablespoons coconut flour,
1/3 teaspoon psyllium husk,
1/2 tsp vanilla or lemon essence.

Directions:
Separate the yolks and egg whites,
In a mixing bowl, combine the egg whites, lemon juice and salt. Mix. Add 1/2 tsp sweetener, continue to mix until the whites are very stiff. Set aside.
In separate bowl, combine the yolks and 1/2 tsp sweetener. Mix well.
Fold the yolk mixture into the egg white.
Add the vanilla extract, coconut flour and psyllium husk. Fold into the egg mixture.
Spoon tablespoon size biscuits onto a baking tray.
Bake in a preheated oven for approximately 10 minutes @ 180°C.
Taste great as is, or use in desserts that require biscuits such as tiramisu.
