Quick and easy Chicken in a Pan weeknight meal. Healthy and Delicious.
Ingredients, (2 Servings)
300g chicken breast,
1 zucchini,
1 onion,
1 bell pepper,
3 small tomatoes,
3 cloves garlic,
100g feta cheese,
Basil leaves,
1/2 tsp baking soda,
Tsp tomato paste,
Salt and pepper to taste.
Method:
Finely chop the onion, pepper and tomatoes. Cut the chicken into bitesize chunks. Slice the zucchini and chop the garlic and basil. Sauté the onion and peppers. Add the chicken and let brown initially without stirring. Add (optional) the baking soda, it helps to soften the chicken. When the chicken is brown on one side, start stirring till all sides are brown. Add the tomato and zucchini, continue to stir. Add the tomato paste and stir through. Season to taste. Cover and simmer till chicken is cooked. Mix in the feta, basil and garlic. Serve and enjoy.!
