Ingredients
- 2 large, red ripe tomatoes, about 1 pound
- Salt to taste if desired
- Freshly ground pepper to taste
- ¼ cup fine fresh bread crumbs
- 1 tablespoon finely chopped pars-ley
- 1 teaspoon finely minced garlic
- 2 teaspoons olive oil
- 2 tablespoons finely chopped shal-lots

Preparation
- Preheat grill to high.
- Cut away and discard the core of each tomato. Cut tomatoes crosswise through the center. Sprinkle with salt and pepper.
- Combine bread crumbs, parsley, garlic, olive oil and shallots in a small mixing bowl. Blend well.
- Top each tomato half with an equal portion of the crumb mixture, pressing down with the fingers to distribute the topping evenly. Arrange tomato halves on a baking dish. Place them about 8 inches from the source of heat and let cook about 5 minutes.
