Perfect for a quick breakfast or treat.
Ingredients:
100g carrots
3 eggs
30g butter
2tbsp coconut flour
Tbsp flaxseed flour
90g walnuts, grind in coffee grinder.
Tbsp Sweetener
1/2 tbsp Cinnamon
Tbsp Baking powder
Tbsp orange skin
Yogurt
Method:
Combine the carrots, egg yolks and butter and blend into a puree.
In a separate bowl, add the dry ingredients, (coconut flour, flaxseed flour, ground walnuts, sweetener, cinnamon, baking powder and orange skin) and mix together. Add the carrot puree and mix into a thick dough.
Mix the egg whites until stiff. Fold the whites in batches into the dough.
Scoop the final mixture into cupcake forms.
Bake in a preheated oven for 30 minutes @ 160°C.
Allow to cool, spoon plain yogurt on each cupcake.
