How To Make Pulled Pork Using a Pressure Cooker. I use a Instant Pot.

Pulled pork is an American barbecue dish, more specifically a dish of the Southern U.S., based on shredded barbecued pork shoulder. It is typically slow-smoked over wood; indoor variations use a slow or pressure cooker. The meat is then shredded manually and mixed with a sauce. It may be served on bread or eaten on its own.

Ingredients:
1.5kg (3.3lb) boneless pork shoulder,
Tbsp salt, add additional later if required,
Tsp cumin,
Tsp black pepper,
Tsp paprika,
Tsp chilli powder,
2 cloves garlic, crushed,
2 medium brown onions, quartered,
Juice of 1 lemon.

Method:
Add a tbsp olive oil to the inner pot of your pressure cooker.
Place the pork shoulder in the inner pot. Roll it over to cover all sides with the oil.
Combine all the dry spices. Pour onto the meat. Roll meat around again so that all sides is covered with the spices.
Crush 2 large cloves of garlic and add to the pot.
Squeeze the juice from 1 lemon, add water to fill a cup and add to the pot.
Quarter 2 medium brown onions and add to the pot.
Close the pot and seal. Pressure cook on high pressure for 1 hour.
For best results, allow the pressure to slow release after the hour cooking has lapsed.
Remove from the pot, can easily be shredded with two forks.
Serve warm or cold, on its own or with a bun or wrap. Enjoy.
