I have a lovely yuca root and thought I’d try making a plant-based mofongo. Typically, mofongo has bacon so I hit the internet in search of a plant-based homemade replacement and happened on [this recipe](https://beautifulingredient.com/quinoa-bacon-bits/). Of course, I would omit the oil used in this recipe.
I noticed that the blogger doesn’t rinse or toast the quinoa. I always find quinoa bitter if it isn’t rinsed or toasted. Has anyone tried making quinoa bacon bits?
