When I was a kid I used to make a late-night treat where you’d heat up butter in a pan, throw a tortilla on it, coat both sides with cinnamon and sugar and bang you’re done. In this same vein, while on keto I took some Carb Balance Mission Tortillas and tried something similar.

The result shouldn’t work the way that it does, but it tastes exactly like belgian waffles and syrup. Not the usual keto workaround of “oh it’s kind of going for it and I can see where it sorta..”, no. *Exactly* like waffles and syrup. Go in blindfolded and you’d never know the difference.

Simple, fast, and delicious:

**Ingredients**

* However many [Carb Balance Whole Wheat Street Tacos](https://www.missionfoods.com/products/street-tacos-carb-balance-whole-wheat-tortillas/) that you want to masquerade as waffles
* Roughly 4tbsp of butter, melted into a large 10-inch skillet with a fitting lid
* About half a cup of [Truvia sweetener](https://www.amazon.com/Truvia-Complete-All-Purpose-Calorie-Free-Sweetener/dp/B084PV5BKH)
* (Has to be the Whole Wheat Carb Balance tortillas, has to be Truvia)

**Steps**

1. Melt all of the butter in your skillet on medium heat
2. Place the tortillas in the butter, and then flip so both sides are coated
3. Take a good pinch of Truvia and add enough to coat each tortilla
4. Cover the pan and simmer for about a minute, this browns one side of the tortillas and melts the Truvia to the other
5. After a minute uncover the pan and flip the tortillas. Add another layer of Truvia to the other side, cover and simmer for 30 seconds.
6. Flip one more time to carmelize the last layer, and remove the tortillas from the pan
7. Quickly pour the remaining pan sauce of butter and Truvia over the tortillas
8. Close your eyes and remember the waffles.
