Full disclaimer: I reverse engineered this recipe from [this commercial product](https://ingfit.ae/products/keto-carrot-cake-jar). They claim it’s 3.5g net carbs, but no matter how I arranged a recipe with the ingredients they listed i could not get even close (they even use molasses!). I was more trying to figure out if this was legitimately a keto product or total BS. Turns out a bit of both I guess, and I got a pretty close copy-cat with reasonably accurate nutritional values… *These are calorie dense!*; if your goal is weight loss, be careful.

525 kCal – 51g Fat – 10g Protein – 9g net carbs per 150 gram serving, makes 4 servings

**Ingredients:**

Cake:

* 100g almond flour
* 50g sweetner (I used brown sugar swerve)
* 60g carrots, shredded
* 50g crushed pecans (+4 whole halves for garnish if you’d like)
* 1 tsp of pineapple extract
* 3 tsp of cinnamon powder
* a big pinch of salt
* 2 tbsp (29g) of butter

Frosting:
* 200g cream cheese, room temperature
* 2tbsp (29g) of butter, room temperature
* 100g powdered sweeter
* 1 tsp of vanilla extract

**Instructions:**

I a big bowl mix all the frosting ingredients and beat by hand or with hand mixer until the mixture fully mixed and light and fluffy. Combine all the cake ingredients except butter in bowl and mix thoroughly. In a medium pot, melt the butter and add the rest of the ingredients. Cook on medium high heat for about 10 minutes, stirring often (about every 30 seconds). Cake mix should be slightly toasted and fragrant.

Remove from the pot and serve in 4 jars or cups. Each serving should be about 150g and it works best if you layer a bit of cake and bit of frosting in the a jar. You could also make half portions if the calorie or carbs is too much for your macros. The problem is that they only keep for about 4-5 days max in the fridge so unless your sharing, 8 portions might go to waste. I am just now testing to see if it freezes and thaws well, in which case it might possible to meal prep a ton of these in advanced.
