We’ve been sick for a couple of weeks, which means we were all craving things like [chicken noodle soup](https://www.foodnetwork.com/recipes/food-network-kitchen/instant-pot-chicken-noodle-soup-5195671) and mashed potatoes with [mushroom gravy](https://www.budgetbytes.com/creamy-mushroom-herb-pasta/) and leek and potato soup.
But now that we’re back to work and school, I need to get organized again, so this was my plan this week – we had a lot of leftover fruit and veggies after Easter, to work into the plan:
Breakfasts: [Chocolate overnight oats](https://www.budgetbytes.com/double-chocolate-overnight-oats/) with strawberries and raspberries Also Banana Almond loaf, and chocolate raspberry almond loaf (both from the Snacking Cakes Book, which is amazing). [Pumpkin granola](https://www.twopeasandtheirpod.com/pumpkin-granola/) with greek yogurt.
Lunches: [Couscous salad and roasted chicken](https://cupfulofkale.com/moroccan-couscous-chickpea-salad/), crudites and [minty pea dip](https://www.foodnetwork.com/recipes/pea-and-mint-dip-9842891), chocolate chip cookies.
Dinners:
[White Bean Enchiladas](https://www.budgetbytes.com/spinach-white-bean-enchiladas-pepper-jack-sauce/) (prepare two pans, freeze one for a later week).
[Marinara Sauce](https://www.budgetbytes.com/slow-cooker-marinara/), for a basic pasta meal and freeze some to use in later recipes.
[Singapore noodles with shrimp and ham](https://www.seriouseats.com/singapore-curry-noodles-stir-fry-recipe) (prep the sauce and veggies in advance, leftovers make great lunches).
Clean out the fridge stir fry with [Teriyaki Sauce and Rice](https://www.budgetbytes.com/easy-homemade-teriyaki-sauce-or-marinade/) (assess and chop the veggies, make rice, make sauce).
And we had leftover beef or veggie burgers, a previously frozen macaroni and cheese, and plan a pancakes for dinner night to finish out the week (I make bags of the dry ingredients for these [pancakes](https://www.budgetbytes.com/easy-homemade-teriyaki-sauce-or-marinade/), and then it’s super easy just to add eggs, yogurt, milk, and vanilla).
So, it’s not my best work and it’s not the most exciting menu, but it’s a plan, which saves me stress, and I got a lot of the prep done, which saves future me stress, and it’ll bridge us until everyone is fully recovered and will clear the decks for the next grocery day. So I call this a win. 🙂
