To make this, you’ll start by preheating your oven to 350. Then you’ll line a small muffin tin with four cupcake liners, or else spray your cupcake tin with oil. Then gather your ingredients, as follows:
### Ingredients:
* ⅔ cup Keto pancake/waffle mix (we used Birch Benders)
* ⅓ cup water
* 3 strawberries, washed and cut into small pieces
* 2 tablespoons sugar-free strawberry jam (we used Smucker’s)
Mix the pancake mix and water together in a small bowl, and then fill four of the cupcake liners halfway, preserving half of the pancake mix in the bowl.
Top the pancake mix in the muffin tin with several strawberry pieces, then top that with a small amount of jam. On top of that, place the rest of the pancake batter, and then place the cupcake tin in the oven for 9-11 minutes. Touch the top of the muffins lightly after the cooking time has passed, and remove from the oven when firm. Allow them to cool before eating.
