INGREDIENTS:

-2 scoops protein powder (I used PEScience snickerdoodle)

-2 eggs

-88ml milk (I use skim)

-1tsp baking powder

-Optional: Extra Cinnamon

DIRECTIONS:

Mix everything in a bowl with a fork until smooth. Heat a sprayed pan on medium and place a ladle of batter into the heated pan. Flip once bubbles form on top, and remove once both sides are golden brown (or slightly over if you’re me, oops!). Doesn’t take long-about 2-3 minutes to fully cook-so keep an eye on it, and be sure to re-spray the pan every time you put new batter in to avoid sticking!! Serve with whatever toppings you like (I used 0 cal maple syrup) and enjoy, preferably with a nice hot coffee (tip: sprinkling cinnamon on your coffee is a game-changer!!)

The French toast streak has ended! I wanted to make something that the carb crash-prone family could enjoy that was quick and easy; this only has 8.7 grams of carbs in the whole thing (+ 12 grams of fat), and it took LESS time than the French toast does!!! The recipe makes 8 medium-sized pancakes (the plate in the pic is a LARGE dinner plate), and it was easy to multiply for more people. I think this is my new staple from now on, and I’m excited to experiment on flavours 🙂
