    # Chickpea Salad (Sandwich Filling)

    This recipe is just like chicken salad, but made with chickpeas! My favorite way to enjoy this is on toasted sourdough, topped with arugula or microgreens.

    Ready in: 15 mins

    Makes enough filling for 4-6 sandwiches.

    **Ingredients**

    * 2 15.5 oz cans chickpeas (garbonzo beans)
    * ½ cup finely diced shallot, about 1 large shallot, can sub onion
    * ¼ cup mayo can, sub vegan mayo
    * 2 tbsp lemon juice
    * 1 tbsp whole grain dijon mustard
    * 3 tbsp chopped chives or green onion
    * 1 tsp garlic powder
    * ¼ cup roughly chopped cornichon (mini) pickles, can sub other pickles, or 2 tbsp relish
    * salt to taste
    * fresh cracked black pepper to taste

    **Instructions**

    1. Drain and rinse the chickpeas
    2. Mash the chickpeas with a fork, or pulse in a food processor until chunky (recommended method if you have one available).
    3. Combine all ingredients together in a medium mixing bowl, season with salt and pepper, mix until fully combined.
    4. Taste the mixture and add more of any ingredient to your liking.
    5. Store in an airtight container in the fridge for up to 5 days. Use as a sandwich filling, serve on toast, or with crackers.

    Yes! I make this all the time but without the pickles. Gonna have to try that! It’s also great with some fresh dill. Also, I usually just use a potato masher when I don’t want to deal with hauling out an appliance lol.

    Oooh I love making this instead of tuna sandwiches. It hits the spot!! I add some cayenne to spice it up sometimes. Also love eating it with just chips, yum!!

    I’ve made this as a sandwich with loads of lettuce and banana peppers on toasted 9 grain bread…quite a yummy sandwich filling! And you’re right, this goes a long way!

    Sounds delicious. I’m going to make this but will likely sub 0% fat Greek yogurt for the mayo (I’m watching my calorie intake).

    Thank you so much for this! I got up and made it immediately, I’ve been craving chicken salad and had a can of chickpeas I needed to use. This was delicious and never thought about using chickpeas in this way!
