    Pre-Breakfast | 8 ounces of coffee and 3 Tablespoons Silk pumpkin spice creamer: 75 calories

    Breakfast | toasted sourdough bread, smashed pinto beans and avocado, pickled red onion: ~375 calories

    Lunch | smoothie with 1 scoop vanilla horchata protein powder, Greek yogurt, chia seeds, cauliflower, spinach, kale, and banana: 375 calories

    Snacks | 1/2 serving Fritos and 1/2 serving dip, and not pictured 2 Loacker mini wafers: 210 calories

    Dinner | sticky tofu, roasted red pepper, pickled red onion, spinach, on toasted wheat ciabatta roll (didn’t finish 1/3 of the roll): 455 calories

    A total of ~1540 calories.
