I mixed together milk, broth, pumpkin, spices, Dijon and liquid together on the stove to simmer. Then I removed from heat and stirred in the Greek yogurt- make sure it’s room temp or it will split- and parmesan cheese (the real, freshly grated kind) and fiesta mix (use better cheese than I did, lol). Then I sautéed the holiday hash and combined cooked tortellini, sauce and hash in a 9×13 pan. Sprinkled with more parm and baked in the oven at 400F for 15 min, til the cheese on the top got crusty. The pumpkin sauce cooked and darkened in the oven!
