On a day that really feels like Autumn, cozy up with some warm scones with clotted cream and jam and a cup of Earl Grey tea. These are super easy and quick to make. You can see how I made them [here](https://youtu.be/gbpzfLo7fxU). Yield: about four 3” scones
**Ingredients:**
* 500g all purpose flour * 50g sugar * 4 tsp baking powder * pinch of salt * 100ml milk * 1 egg, beaten * 70g unsalted butter, very cold
**Method**
1. In a mixing bowl, sift flour, sugar, baking powder, and salt togethe and whisk well. Set aside. 2. In a separate bowl, mix the egg and milk. 3. With a pastry cutter or knife, cut the butter into the dry mix until it becomes grainy. 4. Make a well and add the milk mixture. Mix together until milk mixture is absorbed into the flour mix, then turn out onto a lightly floured surface. 5. Knead dough only until the dry/wet ingredients are incorporated, handling as little as possible. 6. Roll out the dough to about 1/2’ and fold in half. Cut out 3’ rounds and set on a lined baking sheet within 1’ of each other. 7. Bake at 200ºC/390ºF for 10-12 minutes or until lightly golden.
