    Recipe for my roasted veggie fall soup

    Ingredients
    – Pumpkin (usually 1 1/2 the amount of sweet potato)
    – 3 large sweet potatoes
    – 1 large onion
    – 4 garlic cloves
    – mushrooms to taste (usually about 10 or 12)
    – broccoli (I used a small amount because my son doesn’t like them)
    – olive oil
    – salt
    – dried thyme
    – dried chives
    – smoked paprika

    Preparation

    Dice all the veggies, drizzle with olive oil and season. Put in the oven at 220°c until golden brown and roasted. Transfer to a large pot, add water or veggie stock and blend with until smooth.
    Eat your bowl of confort om a cold rainy day
