This is my go-to way to avoid food waste. Whenever I have one leftover carrot, half a cucumber, etc, I make a batch of chickpea mash to make into sandwiches for lunch that week. Super cheap, easy, and adjustable to your tastes and pantry. Here’s the basic recipe:
Ingredients: – canned chickpeas, drained and rinsed (and if you have the patience it makes it better if you can pick off the skins) – mayonnaise – mustard (optional) – minced raw vegetables (whatever you have on hand, but make sure to chop it finely so it mixes in nicely) – minced pickled vegetables (optional of course, but I find it adds a nice zing. I’m a big fan of pickled jalapeños) – salt and pepper to taste – whatever spices you like (paprika is always a go-to for me no matter what flavor palette I go with)
Instructions: 1. Mash the chickpeas in a bowl until most of the beans are at least smashed a bit; it’s up to you how you want the texture to be. 2. Mince your veggies (I used bell pepper, carrot, and cucumber for this one) and add to the bowl. 3. Add some mayonnaise a little at a time and mix until the texture is right. Add some mustard if you like at this point. 4. Mix in salt, pepper, and your desired spices until it tastes good. (For this one, I used paprika and garlic salt, and I added some Worcester sauce for a zing since I didn’t have anything pickled)
Super versatile, makes great sandwiches! I like to serve it on hamburger buns. In the past I have also gotten a 12 pack of dinner rolls, split it in half so there’s a top and a bottom part, placed the bottom part in a casserole pan, spread the mash all across, topped with the top part of the dinner rolls, and had my lunches set for the week. All I had to do was cut out two sandwiches for lunch each day.
