Some serious winds and possibly a wild animal snapped my potato plants stems. I pulled these but for future reference will I be able to heal the plants after a stem break?

Plants don’t heal breaks, unless you’re doing essentially a graft. They can regrow new leaves and stems though, so if there was a lot of time before intended harvest, it would be ok to just clean up the mess and let the plant respond. But if harvest was to happen soon, I’d have done just what you did and dig them.

The plant probably would’ve just sent more energy toward developing more potatoes. Its common to let the stalks grow until they die off, then chop them. After that leave the potatoes in the ground to let the skin develop before harvest
