**Recipe x4:**
* Pasta 400gr * Toasted unsalted pistachios 100gr * Guanciale 120gr (or bacon if you can’t find guanciale) * Parmigiano Reggiano 20gr * 2 Cloves of garlic * Basil 6-7 leaves * EV olive oil, salt and pepper to taste
**Procedure:**
1. Remove the shell from the pistachios trying to remove the dry part around the fruit 2. Cut the guanciale into strips 3. Put a pot with water on a medium heat and wait that it starts boiling. Then add the salt and pasta 4. Add to the blender: the pistachios, cheese, basil leaves, extra virgin olive oil and a little of pasta water. Blend for 3-4 min (the final result of the pesto check the full video link above) 5. Add the guanciale in a pan and let it brown, after 2 min add the garlic clove and the ground pepper cooking for 2 min. Then turn off the heat waiting for the Pasta 6. Remove the garlic and guanciale from the pan and add the pasta al dente. Add a little of cooking water stiring everything (3-4 min with high heat) 7. With the heat off, add the pistachio pesto and mix. If it is too liquid add more cheese and mix 8. Serve the Pasta adding the guanciale 😉 and cheese if you like
