Vegan cactus tacos inspired by American-style Moo Shu Pork. 350 calories for a plate of four.

Nopales Tacos (Inspired by American-Style Moo Shu Pork)
De-spine (if not already de-spined when purchased), wash, and dice 1.5 lbs of nopales. (Note: now that they’re cut into small pieces, technically they’re nopalitos).
Place in a large pot.
Add four quarts of water, along with half of a peeled lemon and a quarter cup of soy sauce.
Bring to a rolling boil and cook for twenty minutes. After twenty minutes have passed, empty the pot into a strainer.
Remove and discard the lemon.
Transfer the nopales to a bowl. Mix two tablespoons of five spice powder, one teaspoon of sugar, and half a teaspoon of MSG.
Add this mixture to the nopales and stir well.
Peel and chop some carrots into matchsticks (or buy pre-shredded).
Heat up on a dry skillet, or preferably make fresh, some small corn tortillas.
Add nopales to each tortilla. Enough to cover most of the tortilla.
Add a large pinch of carrots.
Add spicy kimchi. The larger the pieces the better (it adds a nice crunch).
Top with garlic hoisin sauce (to taste). I use somewhere between one and two teaspoons per taco. Don’t be shy with it.
Eating these is a bit messy, and that’s ok! Have napkins ready.
Nopales (cooked and seasoned): 85 calories per 100 grams.
