    4. roasted butternut squash (45 min in the oven at 425 with a bit of oil) topping with shredded chicken, kale, tomatoes, feta and chipotle aioli

    the chicken I prepped for the week is made in my instapot – I throw salsa, taco seasoning and chicken in there for 9 minutes then shred it and put it back in to soak. all the salsa keeps it fresh for the week
