There’s a seaweed in Hawaii called “ogo” that’s often used to make poke. It’s only 10 calories per 100 grams. Reviews of frozen or dried ogo are mixed, but I’m able to buy it fresh, so I tried making fried rice with it. This is 300 grams of fried rice and was under 500 calories.

    **Note: it’s 557 calories. I forgot to count the sugar and the second egg when I made the initial calculation (and wrote the post title). As a result I was 85 calories shy of the actual total**

    **Still though I’m a big guy and I’m extremely full after eating this.**

    Ogo fried rice:

    1/2 tbsp canola oil

    Large nonstick pan

    Medium heat

    Add day old rice (I made 1.5 cups dry yesterday and used a quarter of the resulting yield for this recipe)

    Add one teaspoon finely chopped garlic

    Add one teaspoon finely chopped ginger

    Cook for roughly five minutes, stirring occasionally

    Add a large handful (~90 grams) washed and chopped ogo

    Cook for another few minutes stirring continuously to mix the ogo into the rice

    Remove the rice / ogo mixture from the pan

    Whisk two eggs with one teaspoon soy sauce and one teaspoon sugar

    Add half a tbsp canola oil to the pan

    Scramble the eggs. As soon as they’re just barely done, add in the rice/ ogo mixture and turn off the heat. Mix until the eggs are incorporated.

    Sprinkle in a large pinch of MSG (evenly distributed)

    Sprinkle in a couple large pinches of five spice (evenly distributed)

    Throw in a small handful (~20 g) chopped green onion, mix until incorporated

    Plate, sprinkle one large pinch of red Hawaiian sea salt on top

    Yield: 2.5 cups / 300 g, 557 calories (when calculating calories I assumed that the ginger / garlic / green onion / 5 spice combined added about 15).
