    **Recipe:**

    * Pasta 400gr / 14oz
    * Stale bread 150gr / 6oz (mine is gluten free, I’m celiac 🙂
    * Nuts 8-9pcs
    * Garlic (3-4 cloves)
    * EV olive oil, salt, parsley, chilli and pecorino cheese to taste

    ​

    **Procedure:**

    1. Put a pot with water on a medium heat and wait that it starts boiling. Then add the salt and pasta
    2. Cut the bread into cubes
    3. Add oil, garlic and chilli to the pan and after 2 min add the bread and a pinch of salt. Cook until the bread is almost crunchy
    4. Add the cooking water and cook for 2-3min
    5. Blend it and keep aside
    6. Shell and chop the walnuts
    7. olive oil garlic and walnuts in the pan
    8. Let them brown for 3-4min then add a little bit of pasta water
    9. Drain the spaghetti al dente and cook in the pan with the walnuts for 4min more (pay attention to the cooking time of the pasta)
    10. Last minute add the bread cream and a little bit of pasta water. Mix well, everything will became a creamy and tasty sauce
    11. Turn off the hwat adding pecorino cheese, pepper and parsley. Mix well and serve the pasta
    12. Add fresh olive oil and pecorino cheese
