I’m a big fan of adding doenjang to pasta dishes, and this creamy mushroom doenjang pasta is a great Korean fusion pasta recipe. The umami flavor of doenjang pairs perfectly with the creamy mushroom pasta sauce, which clings well to the al dente linguine.
It’s a 15-20 min recipe and tastes great with some banchan side dishes!
Ingredients:
* 2.8 oz pasta (80g) * 2 garlic cloves, thinly sliced * ½ onion, thinly sliced * oil * 5 mushrooms, sliced * 1 tbsp doenjang * ½ cup cheddar cheese (30g) grated or chopped into small pieces * 1 scallion, chopped * ⅛ tsp black pepper * ¼ cup heavy cream (60ml) double cream/whipping cream * ¼ cup pasta water
Instructions
1. Cook 2.8 oz pasta in boiling water until al dente. Reserve ¼ cup of pasta water. Drain and set aside. 2. In a saucepan, add oil and cook 5 mushrooms, ½ onion and 2 thinly sliced garlic cloves until soft. Add ¼ cup heavy cream, ½ cup cheddar cheese, and 1 tbsp doenjang paste. Stir and heat until melted. Add the cooked pasta, and pasta water as needed. Remove from heat. 3. Toss pasta to coat in sauce. Finish with ⅛ tsp black pepper and 1 chopped scallion.
