I made this Middle Eastern inspired bowl. The star of the dish was the hummus which was:

1 cup cooked chickpeas
2 TABLESPOONS peanut butter
30ml lemon juice
3 garlic cloves (I like it super garlicky)
1 jalapeño
Salt to taste

I threw the above in a blender and kept adding a little water until I got the consistency I wanted.

The fried eggplant was especially delicious!
