Why does my crust taste like soap?

    When you fermented the dough, was it in a cloth that was recently washed and had a strong detergent smell?

    Did you use a silicone mat that you washed in the dishwasher at any point in the process?

    I’d be surprised if it’s this but…

    In the beer brewing world this is one of many possible benign but undesriable off-flavors that can result of fermentation going wrong. Did you by chance have any fat in the dough and a very long proof? That can cause literal soap to form

    I always think Cilantro tastes like soap (some people do and others love it) did you happen to use that herb in your bread? Just a silly thought at the mention of the crust tasting like soap!

    Do you spray your loaves with water in the oven to get a better crust/spring? If so, I’d check your water and make sure you didn’t clean it recently or accidentally add dish soap to clean something

    I have a GF who loves Mexican food, but hates cilantro. I cant wrap my head around that.
    She says it tastes of soap.
