This king oyster mushroom salad is versatile, can be mixed with the dressing of your choice! I made a spicy and garlicy Sichuan sauce to go with it. This dish is often served as a cold appetizer. The mushroom has a light fragrance and chewy texture.
* 2 king oyster mushrooms (1lb) * 2-3 green onions * 4-5 cloves of garlic
Dressing:
* 3 tsps chili powder (adjust as needed) * 2 tbsps smoking hot oil * 1 tsp salt * 2 tsps sugar * 1 tbsp soy sauce * 1/2 tbsp black vinegar * 1/2 tbsp sesame oil * A pinch of Sichuan peppercorn powder * Optional: crushed peanuts, sesame seeds, cilantro
**Directions:**
1. Wash and pat dry the mushrooms. Remove the mushroom head. Peel the mushroom using a vegetable peeler. 2. Chop green onions and garlic for later use. 3. Put all the mushrooms in the boiling water and boil it for 3 minutes using medium heat. 4. Place the cooked mushrooms in cold water to cool down. 5. Dressing making: Place the chili powder and garlic in a bowl, pour in the hot oil and let them sit for 30 seconds. Add the rest of the dressing ingredients in and stir well. 6. Squeeze out all the water from the mushrooms and place them onto a plate. 7. Mix the mushrooms with the dressing. Enjoy!
