Frittata Ingredients: Spring Onions 2pcs Peas 4tbsp small Courgette 1pcs Cheddar Cheese 100g Eggs 4pcs
Preparation: 1. Slice the spring onions 2. Cut the ends off the courgette, then cut it into half, cut the halves into slices and then the slices into cubes 3. Grate the cheddar cheese 4. Crack the eggs into the measuring jug and beat with a fork until mixed 5. Stir in most the cheese, all of the peas and seasonings into the eggs 6. Keep some cheese for decoration
Steps : 1. Gently heat 1 tbsp oil in a frying pan, then add the vegetables and cook until softened 2. Add the egg mixture and stir once gently to mix. Then allow to cook undisturbed on a low heat until the mixture has coagulated 3. Preheat the grill 4. When the frittata seems set on the base but is still a little eggy on top sprinkle the spare cheese on top 5. Then place the frying pan under the grill to cook the egg mixture and melt the cheese. Cook for 3-4 minutes or until golden brown
