Potato Curry

    **Ingredients:**

    * 2 tablespoons oil/butter
    * ¼ teaspoon cumin seeds
    * ¼ teaspoon mustard seeds
    * Few curry leaves
    * 1 finely chopped onion
    * 1 teaspoon (Kashmiri) chilli powder
    * 1 teaspoon ginger – garlic paste
    * 1 teaspoon turmeric powder
    * 1 tablespoon coriander powder
    * 1 tablespoon garam masala ([tutorial](https://www.allrecipes.com/recipe/142967/easy-garam-masala/))
    * Salt to taste
    * 1 finely choppped tomato
    * A glass of water (approx)
    * 3 large potatoes
    * 1 cup curd (or plain yogurt)
    * 2 green or red chillies [optional]

    **Prep:** boil, peel & dice the potatoes

    **Instructions:**

    1. In a heated saucepan, fry the cumin seeds, mustard seeds & curry leaves in oil/butter
    2. Add in the chopped onion when the mustard seeds splutter & fry until softened
    3. Add the chilli powder, ginger garlic paste, turmeric, coriander powder, garam masala & salt
    4. Now add the tomato & mix before adding a glass of water
    5. Add in the potatoes & mix until the liquid part thickens (don’t crush the potatoes)
    6. Turn off the flame, add in the curd & mix thoroughly

    **Garnish:**

    7. Fry the chillies in oil & place it on top of the curry

    Ready to eat! Serve hot with puri or bhature
