**Prep:** boil, peel & dice the potatoes
**Instructions:**
1. In a heated saucepan, fry the cumin seeds, mustard seeds & curry leaves in oil/butter 2. Add in the chopped onion when the mustard seeds splutter & fry until softened 3. Add the chilli powder, ginger garlic paste, turmeric, coriander powder, garam masala & salt 4. Now add the tomato & mix before adding a glass of water 5. Add in the potatoes & mix until the liquid part thickens (don’t crush the potatoes) 6. Turn off the flame, add in the curd & mix thoroughly
**Garnish:**
7. Fry the chillies in oil & place it on top of the curry
