Here is an easy, delicious, hot soup to keep you warm this winter!
**Ingredients:**
– 250 grams button mushroom – 1 medium onion – 1/2 tbsp garlic – 1tbsp olive oil – 5-6 cashew nuts – 1 cup milk – Salt and pepper
**Method:**
1. Roughly chop the onion, mushrooms and garlic 2. Heat a saucepan on medium heat and add 1 tablespoon of olive oil. 3. Add in chopped garlic and onion. Sauté till onions become golden brown. 4. Add in chopped mushroom and cashew nuts. Cook till mushrooms are soft and golden, then remove from heat. 5. Add the cooled mixture to a blender jar and blend till it forms a smooth paste. 6. Add the purée back to the saucepan and cook on low heat till it begins to simmer. 7. Add in 1 cup stock (chicken/vegetable/water). 8. Cook for 1-2 minutes. 9. Top with herbs or a sprinkle of cheese. Serve warm and enjoy! 🤤
