He’s making kimchi mari/bibim guksu, you can check out recipes. It’s some kind of corn syrup or similar sweetner, sesame oil, fake sugar maybe msg, vinegar, things like that. Look up kimchi mari/bibim guksu and you will see recipes. I saw his kimchi video, he knows what he is doing.
