Oven Roasted Chicken in Cast Iron skillet

    Ingredients

    * 4 – 5 lb whole chicken – cut up into thighs, legs and breasts
    * spices: 2 tsp paprika (sweet Hungarian), 2 tsp salt, 1 tsp black pepper, 1/2 tsp garlic powder and 1/2 tsp onion powder
    * Several sprigs of fresh thyme
    * 2 TBS butter

    Instructions

    Preheat oven to 450 deg and put cast iron skillet into oven to preheat

    Meantime mix your spices and mix thoroughly

    Break down your whole chicken

    Apply spice mixture to top and bottom of each piece

    Take hot skillet out of oven, add 2 TBL of butter and several sprigs of fresh thyme

    Put chicken into skillet, bake 15 min on one side, flip 15 min on the other side

    Let rest for 10 minutes in pan

    Serve. Recommend to spoon pan juices over the chicken

    Okay, some may be wondering how this is a budget meal if we’re cooking with fresh herbs and chicken. Depending on who is in your household, you could get 2 meals out of a whole chicken. Also, all the parts that were not added to the pan can be kept aside for making chicken broth.

    Regarding the fresh herbs, plant an herb garden or even plant fresh herbs in pots in your kitchen. One $5 dollar thyme plant from a nursery has yielded A LOT of herbs. Been going strong for 3 years and is a bush in my yard.

    I’m missing one chicken breast from the pan. Technical error that will be made into chicken nuggets or strips.
