Maple mustard pulled pork from the “Downshiftology — Healthy Meal Prep” book by Lisa Bryan.
For the pork shoulder:
4-5 lbs pork shoulder or butt
1 tbsp dried oregano
1 tbsp ground mustard
1 tsp salt
1/2 tsp ground black pepper
1 medium yellow onion, sliced
4 cloves garlic, diced
Trim excess fat from pork. Combine seasonings and rub into pork. Place pork in slow cooker, add onion and garlic around it.
For the sauce:
1/2 cup pure maple syrup
1/3 cup whole grain mustard
1/2 tsp dried oregano
1/4 tsp kosher salt
Pinch black pepper
Whisk together sauce ingredients. Pour half of the sauce over pork (reserve other half for serving). Cook on low 8-10 hours. Shred and serve with mashed potatoes and reserved sauce!
