Dairy free pasta salad with 34 grams of protein! Around 550 calories but less depending on your dressing

    Cubed then boiled firm tofu in salted water for 20-25 minutes (originally pressed it but idk if that makes a difference). Drained, cooled then marinated in almond milk with lemon juice and nutritional yeast. Drained and added to pasta salad with carba-nada pasta, vinaigrette, carrots, bell peppers, cucumber, tomatoes, red onion, and some seasoning. The tofu is just like fresh mozzarella in the salad! The recipe can easily be made vegan if you use a vinaigrette without honey and a pasta without egg. This was super filling and more so than I expected!
