I overcooked the eggs slightly but I still think it looks good (and tastes even better!) Another recipe added to the repertoire
Recipe for 4 servings:
1) Cut 3 leeks into 1cm thick slices. Cut 6 green chilis into slices too, about the thickness of a pound coin.
2) peel 3 large garlic cloves and crush under the flat blade of a knife.
3) pop the leeks, green chilis and garlic cloves into a frying pan with oil (or butter, or spread) and fry until soft, moving every so often
4) while the leeks are frying, cook gnocchi as instructed (I used fresh and store-bought, so it was two minutes on a high simmer). Add at least half a teaspoon of salt to the water.
5) while the gnocchi is cooking, beat 4 medium eggs with a pinch of pepper, another pinch of fajita seasoning, and another pinch of cumin.
6) grate 50g or so of cheese (I used english mature cheddar, the recipe I read calls for 25g pecorino, 25g parmesan) and mix most of it into the eggs, leaving some to sprinkle on the finished procuct
7) when the leeks and gnocchi are finished cooking, take them off the heat. Do not drain the gnocchi. Don’t worry if either is done before the other, just turn the hobs off as you’re done.
8) add the gnocchi to the leeks, chilis and garlic using a slotted spoon. Don’t worry about any water splashing into the frying pan, you want this to happen.
9) quickly add in the egg and cheese mixture, adding a few tablespoons of gnocchi water as necessary to maintain a saucy but not wet consistency.
10) using the slotted spoon, slowly fold the ingredients together, watching for the cheese to melt and eggs to cook, without it turning into scrambled eggs. If you see this happening, immediately take the pan away from sources of heat (e.g. move to a cooler hob plate)
11) divide into portions and sprinkle with cheese. Enjoy!
