Ingredients -1 pound elbow noodles -6 cups shredded Mexican cheese -4 cups whole milk (or whatever milk I guess, evaporated would probably be fine as well) -4 tablespoons all purpose flour -4 tablespoons butter -1 can diced tomatoes -1 can corn drained -1 pound ground beef or chorizo -1 medium yellow onion diced Seasoning -Adobo -Chipotle chili powder -Taco seasoning
Instructions
-Boil noodles in salted water until al dente -Drain, set aside -Cook ground meat, corn, and diced onions until translucent -Add in taco seasoning and a little water, let cook until thickened -Set aside
-In a large skillet or pot add butter, melt -Sprinkle in flour and stir and let cook on medium heat for a couple minutes until golden brownish color -Slowly add in milk and whisk until incorporated smoothly -Let simmer and thicken -Add seasoning, adobo, chipotle, and whatever else you want keep whisking
-Add in 4 cups of cheese slowly and stir until smooth and melted -Add in meat onion corn mixture mix well add can of tomatoes(i didn’t drain) -Add more seasoning to taste -Add in noodles -Place in large oven safe dish -Add rest of cheese on top -Bake at 375 until cheese is melted (Best if you broil for a couple minutes at end, but my kids and husband doesn’t prefer it that way)

Baked macaroni and ‘queso’ recipe
I winged it but this is roughly what I did
