***INGREDIENTS***
* 3/4 cup unsalted butter * 1 1/2 cups white sugar * 1/2 cup brown sugar * 3 eggs + one extra egg yolk * 1 tbsp vanilla extract * 1 tsp salt * 1/4 teaspoon baking powder * 2 tbsp cornstarch * 1 1/2 cups cocoa powder * 1 cup all purpose flour * 1 1/2 cups semi-sweet chocolate chips * 1/2 cup heavy cream * Rainbow Candy Coated Chocolate Chips (you can find these on Amazon!)
***INSTRUCTIONS***
1. Melt butter and sugar together in a microwave safe bowl and stir until sugar and butter are thoroughly combined. 2. Add eggs, egg yolk, vanilla extract, salt, baking soda and cornstarch to the butter and sugar mixture. Combine until there are no lumps in the mix and then fold in flour and cocoa powder. 3. Spread the brownie batter into a parchment paper-lined pan and bake at 350 degrees Fahrenheit for 25 minutes. 4. While the brownies bake, make the chocolate ganache for frosting. Heat the heavy cream in a saucepan on the stovetop until it is bubbling but not boiling. Then pour the hot cream over the chocolate chops and stir until well combined and the chocolate chips are melted. 5. When the brownies are finished baking, pour the ganache over top of the brownies before removing from the pan, top with candy coated chocolate chips and refrigerate brownies until the ganache has set enough to slice. You don’t want the ganache to ooze when you cut the brownies so letting them firm up a bit is important! 6. Once the ganache has firmed up, slice your brownies as desired and enjoy!
