Single serve enchiladas!

    I added few different variations that I’ve put into my fitness pal for calories. I started to make these individual servings so I wouldn’t have to wash a big pan. Spray the dishes first and make sure they are oven safe.

    Put in thin layer of enchilada sauce (or blend up salsa verde until smooth for a low cal sauce) and then fill tortillas with your choice of meat and beans, then top with more sauce and cheese. Bake at 375 until the top bubbles. Change up the tortilla to a low carb version or use two street taco tortillas with filling stacked in between for lower carbs. These are so easy to make!
