I sauteed the onions in butter until very soft and golden, then added basil and tomato paste etc… Microwaves are for reheating leftovers, not cooking.
I also added quite a lot of high quality smoked paprika to the mix.
I used bone in and skin on thighs which I browned off before adding to the slow cooker… At the end I removed the bones and skin and fried off the skin to make little crispy skin croutons… Bones and skin contain all the flavour!
